Air Fryer, Immersion Blender, Chopping Board, Chef Knife, Mixing Bowl, Skewers, Zester/Grater

INGREDIENTS

For the Chicken Satay:

300g chicken thigh, cut
into strips

2 tbsp light soy sauce

1 tbsp honey

1 tsp curry powder

1 tsp turmeric powder

1 tsp ground coriander

1 tsp ground cumin

2 cloves of garlic, minced

1 tbsp fresh ginger, peeled and grated

1 tbsp fresh lime juice

salt and pepper, to taste

For the Peanut Dipping Sauce:

2 tbsp creamy/smooth peanut butter

2 tbsp light sauce

1 tbsp honey or brown sugar

1 tbsp fresh lime juice

1 clove of garlic, minced

1 tsp fresh ginger, grated

1/2 tsp chili flakes (adjust to taste)

warm water to thin the sauce

DIRECTIONS

Step 1

In a large bowl, combine soy sauce, honey, curry powder, turmeric, coriander, cumin, minced garlic, grated ginger, lime juice, salt, and pepper. Mix well to create the marinade. Add the chicken strips to the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for best flavour.

Step 2

In a handheld stick blender jug, mix together peanut butter, soy sauce, honey or brown sugar, lime juice, minced garlic, grated ginger, and chili flakes. Gradually add warm water and use the stick blender to blend everything together until the sauce reaches your desired consistency. Adjust seasoning to taste. Set aside.

Step 3

Preheat the air fryer to 190°C. Thread the marinated chicken strips onto the soaked wooden skewers. Place the chicken skewers in the air fryer basket, ensuring they are not touching to allow for even cooking. You may need to work in batches depending on the size of your air fryer. Air fry for 10-12 minutes, or until the chicken is fully cooked and has a nice color, turning halfway through cooking.
Remove the chicken skewers from the air fryer and let them rest for a few minutes before serving.

Step 4

Arrange the chicken satay skewers on a platter. Serve the chicken satay with the peanut sauce on a bowl in the centre of the platter for dipping. Garnish with additional lime wedges, cilantro leaves, slicer red chilli and chopped peanuts if desired.
