INGREDIENTS

For the Steak:

450g beef steak (e.g., sirloin or ribeye)
Salt and pepper, to taste
1 tbsp olive oil

For the Salad:

4 cups mixed salad greens (like romaine, rocket, and spinach)
1 cucumber, sliced into thin ribbons
1 small red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup fresh coriander, roughly chopped
1/2 cup fresh mint leaves, roughly chopped
optional: Sliced red chili for extra heat

For the Thai Dressing:

5 tbsp fresh lime juice
3 tbsp fish sauce
2 tsbp light soy sauce
2 tsp sugar or honey
1 clove garlic, minced
1 tsp fresh ginger, grated
1 small red chili, deseeded and finely chopped (adjust to taste)

DIRECTIONS

Step 1

Preheat the air fryer to 400°F (200°C). Season the steak generously with salt and pepper. Lightly brush both sides with olive oil. Place the steak in the air fryer basket and cook for about 8-12 minutes, depending on the thickness of the steak and your desired level of doneness, flipping halfway through. Use a meat thermometer to check for doneness: (52°C) for medium. Once cooked, let the steak rest for 5-10 minutes, then slice thinly against the grain.

Step 2

In a large bowl, combine the mixed salad greens, cucumber ribbons, red onion, cherry tomatoes, cilantro, and mint leaves. If using, add the sliced red chili.

Step 3

In a small bowl, whisk together lime juice, fish sauce, soy sauce, sugar or honey, minced garlic, grated ginger, and chopped red chili until the sugar dissolves.

Step 3

Add the sliced beef to the salad. Drizzle the Thai dressing over the top and gently toss to combine, ensuring all the ingredients are well coated and served.
